Ingredients:
4 eggs, separated
1 Tablespoon "Just Whites" (egg white powder)
1 cup cottage cheese
1 Tablespoon gluten flour
2 Tablespoons butter
2 Tablespoons oat bran or wheat bran
1/2 teaspoon vanilla
1/4 teaspoon cream of tartar
Beat egg whites and cream of tartar until stiff peaks form. Blend remaining
ingredients in the blender until smooth. Fold blended mix into beaten egg
whites gently. Cook in waffle iron sprayed with Pam. Makes 8 squares about
the size of a slice of bread. These freeze very well if layered with wax paper
and put in a ziplock bag. They can be taken directly from the freezer and
popped in the toaster to thaw and heat.

Total carbs with wheat bran: 16.73 (2.1 per waffle)
