Pan Fried Trout with Bacon

A campfire cooking classic, this dish combines the smoky taste of bacon with fresh fried trout.
Watch the bacon carefully, removing it as soon as it’s done, so the remaining fat in the pan
(which you’ll use to cook the fish) doesn’t get a burnt flavor.

Prep time: 5 minutes Bake/Cook time: 10 minutes

Ingredients:
8 slices bacon
1/2 cup stone-ground cornmeal
1/2 cup Atkins Bake Mix
1 teaspoon chili powder
4 whole trout, gutted
2 tablespoons peanut oil
Salt and pepper

Directions:
1.In a large heavy skillet, fry bacon over medium heat until crisp. Remove skillet from
heat, drain bacon on paper towels (leave drippings in skillet).
2.In a shallow plate combine cornmeal, bake mix and chili powder.
Roll each fish in cornmeal mixture. Tap off excess
3.Add peanut oil to drippings in skillet. Heat over medium heat.
Fry fish (two at a time), 5 to 6 minutes per side,
until lightly browned and cooked through. Season to taste with salt and pepper.
Crisscross 2 bacon slices over each fish, and serve with lemon wedges.
