Serves 8
8 medium green peppers
2 large red onions, finely chopped
2lb meatloaf mixture (veal, beef, pork)
1t dried dill
3T oil
1t salt
1t white pepper
1 large carrot, grated
1/2c chicken stock
3t unsweetened tomatoe paste
1c sour cream
Saulte onions in skillet until golden brown. Add meat, pepper, salt and dill.
Brown and mix about 5 min. Let cool. Wash and core peppers. fill peppers with
meat mixture and place open side up in oven. combine chicken stock and tomatoe
paste and pour over pepper. Sprinkle shredded carrots on top of peppers. Cover
and cook in oven at 375 degrees until peppers are done. When serving add
generous amounts of sour cream if desired. 7.7g carbs/serving
