Serves 3-4
1/2lb large mushrooms
1/2lb ground raw turkey, chicken, veal, lamb, or beef
2t olive oil or oil of choice
1 clove garlic, finely chopped
1/2t dried basil
1/2t white horseradish
1/2t soy sauce
black pepper to taste
Preheat oven to 350. Oil a cookie sheet well with veggie oil or pan spray.
Remove mushroom stems and chop finely, then combine the ground meat of choice.
Heat the two teaspoons of oil in pan and add mushrooms and meat mixture with
garlic. Cook over moderate heat until meat is browned. Cool mixture. Combine
meat and mushroom mixture with basil, horseradish, soy sauce, and black
pepper. Stuff mushroom caps with mixture. Place caps stuffing side up on oiled
cookie sheet. Bake for 18 min.
