stuffed cabbage

boil a large head of cabbage
while that is boiling get out your food processor, or plan on dicing a lot shred the following
12 ounce pacage of mushrooms
2 small to med sized zucchini
2 small to med yellow squash
small red onion
mix this with 3 lbs of ground beef
6 eggs
tablespoon of dijon mustard
2 tablepoons of ketchup
tablesppoon of crushed garlic
salt and pepper, lightly

once the cabbage is boiled take all the usable leaves off of it and set aside
take the core of the cabbage and put it thru the shredder too
and put that also int the mix
put the mix in the cabbage leaves as you would for any stuffed cabbage
and roll the leaves place the stuffed cabbage in a pot,
cover with a can of tomatoes,

cook at 350 for about an hour,
check on it frequently,
cook a little longer if needed a little shorter if your oven runs hot

not sure of the carb content,
but should be low as all the items in it are allowed
