Serves 2
1/2lb raw spinach
1 clove garlic, halved
2t lemon juice
2T olive oil
3T crumbled crispy cooked bacon
3T thinly sliced scallions
1 hardboiled egg, cut into wedges
1/2 ripe tomatoe, cut into wedges
Wash spinach thoroughly, changing the water several times. Drain, and remove
stems. Wrap leaves in a damp towel and chill. Rub inside of a salad bowl with
the cut surface of the garlic clove. coat inside of bowl with lemon juice and
olive oil. When spinach is chilled, tear into bitesized pieces and place in
prepared bowl. Add bacon and scallions and toss well. arrange egg and tomatoe
wedges around edge of salad and serve.
