Spinach Egg Pie

Serves 4

two packages frozen spinach or equivalent amount fresh
1 large red onion, grated
3 cloves garlic, crushed
1/2c butter
1/2t salt
freshly ground pepper to taste
1/2t nutmeg
6 eggs
1t baking soda

Preheat oven 350 degrees.
Defrost spinach and saulte in 3t butter for 5min.
Put eggs into large bowl.
add pepper, salt, and baking soda and beat until fluffy.
Add cooled and saulteed spinach, grated onions, nutmeg, and crushed garlic and mix thoroughly.
Grease baking pan thoroughtly with remaining butter and place in 350 degree oven.
When butter is melted, remove and pour in egg/spinach mixture.
Return dish to oven and bake about 45min or until golden on top.
