Breakfast Souffle

Serves Two

2 Egg whites
1/2t cream of tartar
1/2c cooked sausage, drained well on paper towels(or crumbled bacon or ham)
1 egg yolk
1/2 package artificial sweetner (preferably splenda)

Heat oven to 300 degrees.
Butter a 9" cake pan with butter, veg. oil, or pan spray.
Beat egg whites until frothy with mixer.
Add cream of tartar and beat until stiff peaks form.
Combine meat, egg yolk and sweetner in separate dish and mix well.
Fold GENTLY into egg whites being careful not to mix to thoroughly.
Pour mixture into buttered cake pan and bake in preheated oven for 25-30 minutes.
Turn broiler up and brown souffle under it for 2-3 minutes watching so it doesn't burn.
