Potato Salad

4C Jerusalem Artichokes,
cooked, drained, and sliced
2T celery seeds
1 red onion, minced
1oz canned pimientos
1 green pepper, cut into strips
1c mayo
1t salt
3T mustard
1T splenda
paprika to garnish

In a large bowl combine all ingredients.
Adjust seasonings to taste.
Chill until ready to serve.
One half cup serving is 8g carbs.
