ingredients:
5 pork chops, boneless, about 1/2 inch thick
italian seasoning
garlic,ground
sauce, homemade,( see below for quick sauce if you dont know how) about two
cups
grated cheese
onion
pepper
mushrooms (i prefer baby bellas)
olive oil
take the chops and season them with the italian seasoning and a little garlic,
pepper if you wish
set aside in the fridge for an hour
sautee some thinly sliced onion, peppers and mushrooms in the ground garlic and
some olive oil, bout tablespoon of the oil untill the veggies are wilting or
sweating
set aside
in a hot skillet put about two tablespoons of olive oil and heat,
place the seasoned chops on the pan when one side is browned, about 5 min on
med heat, turn and let cook on other side for 5 min
when brown on both sides add the sauteed veggies and cover with the sauce
let simmer in the pan until the meat is fork tender
sprinkle with parm cheese and serve
ideal with spagetti squash or with a salad
I served mine with the squash and some broccoli steamed on the side
see below for a quick sauce
can thick crushed tomatoes,at least two cups worth
italian seasoning
ground garlic
sauteed the garlic in olive oil for a few min
add some of the italian seasonings
and then the tomatoes
simmer for about ten to twenty min
if the can of tomatoes is too thin you can add some tomatoe paste or if it is too thick
you can add some water
but i wouldnt add too much cause when you mix it in the pan with the pork chop
that will thicken it too
enjoy!
