over a grill place washed whole peppers (red sweet ones are best for this and i ussually do about 6 at a time) let each side char, as it cooks it will become softer use tongs to turn it as the charring starts when it is done on all sides and nicely charred, plunge the peppers into an ice cold bath of water the charred skin will slip off with just a little effort clean the seeds and core from the meat of the pepper place the cleaned pepper in a bowl and refridgerate overnight it will seep out its own juice to stay fresh in, it is a wonderful addition to a summer meal
the peppers are about 2.7 carbs for a whole one done in this manner
if you wish you can also add a teasp of ground garlic
