sweet roasted red peppers and balsamic vinegar

take 1/2 cup sweet roasted peppers(see how to roast sweet red peppers)
and dice them up fine
add two tablespoons of balsamic vinegar(get a good one as this is the best flavored)
let sit together overnight
this makes a low carb low fat salad dressing for a green leafy salad
about 2 carbs per serving if my info is right and the flavor,
oh is wonderful

over a grill place washed whole peppers (red sweet ones is the best)
let each side char,
as it cooks it will become softer use tongs to turn
when itis done on all sides and nicely charred
plunge it into an ice cold bath of water
the charred skin will slip off
clean the seeds and core from the meat of the pepper
place the cleaned pepper in a bowl and refridgerate
it is a wonderful addition to a summer meal
