Ham Rolls

These are tasty little treats.

1 small cucumber
1 8 oz package of cream cheese - softened (i just got the tub stuff)
2 tbls coarse mustard (grey poupon worked for me)
1 tsp dill weed
8 slices boiled ham (about 8 oz)

Take the cucumber and leave the skin on, cut it in half lengthwise.
Using a spoon take out the seeds and discard.
Then cut each cucumber half into 4 pieces,
you should have 8 lengthwise pieces total.
In a medium bowl, combine cream cheese and mustard, until well combined.
Add dill and combine until thoroughly mixed.
On each piece of ham spread about 2 tbls of cream cheese mixture.
Lay cucumber across short end of ham edge
cut off any excess cucumber (that hangs over the end) and roll up.
Put in fridge for about 20 mins,
and cut into 1 inch pieces with a sharp serrated knife.
Makes about 4 rolls per piece of ham.
Has trace of carbs per serving, which is one 1-inch slice.
