Fried Eggplant

1 Large, peeled, sliced eggplant
1 Large bag plain fried pork skins - crushed fine
1 egg
1/2 c. milk
1/2 t. garlic powder
1/2 t. seasoned salt
dash of pepper
extra virgin olive oil or butter (the butter is easy to burn though)

Beat egg and mix w/milk
mix all dry ingredients together in bowl
dip each slice of eggplant in milk/egg and then batter w/dry mixture.
Fry in olive oil until crispy.
MMMMgood!
Could also be done w/zuchinni or yellow squash
