chicken fried steak with gravy

(Can be used during two days of liberal carb eating)

4 cube steaks (or pork steaks may be sub)
2 beaten eggs
1 bag pork rinds, crushed finely
canola oil (my preference)
1 small head of cauliflower, steamed or boiled until very tender and drained
1/3c heavy cream
salt and pepper to taste

Dip steaks in egg and coat with pork rind crumbs.
Fry until done.
Meanwhile, puree cauliflower adding cream slowly until you get gravy consistency.
May have to add more or less of cream depending on how thick you like your gravy.
If you can't get gravy thin enough, try adding a small amount of water.
Salt and pepper to taste.
Pour over steaks.

carb count depends on how much gravy is eaten.
cauliflower and cream has small amounts of carbs per serving.
