easy chicken soup

three chicken legs
one package of frozen vegetables
(i use a mix of broccoli,carrots,mushrooms and green beans it is stop and shop oirental vegetables,
5 gm of carb per serving and 25 gm for whole package)
knorr boullion cubes 2
basil i use about 4 fresh leaves
parsley about a tablespoon of fresh
about two tablespoons fresh chopped red onion

boil the legs in about 10 cups of water
and then strip the meat off the legs and set aside to chop up when cool
skim the oil from the top of the water.
add the boullion and start to simmer
when the water is just below a boil
add the basil and parsley
when the water starts to boil add the frozen vegetables
and then the chopped chicken
cover and when all the vegetables are done let simmer another 5 min,
(if you wish to make it thicker you can add a 1/4 cup flour this will add 22 gm of carb for the whole pot,)
for the whole pot without the flour it is about 30 carbs,
and with the flour it is about 52 carbs,
but that is for the whole pot
you end up with about 12-14 cups of soup
each cup of soup is approximately 5 carbs with the flour and about 2-3 without
you can add more meat if you wish
or different herbs if you wish
neither will change the carb content
this is a good filling soup and is easy to make after a long busy day
