Chicken Nuggets

Broiled Chicken Nuggets
4 skinless boneless chicken breast halves (about 1 1/2 lbs)
1/3 cup butter or margarine
3 cloves garlic, finely chopped
1 tsp paprika
1 tsp tarragon, crumbled
1/2 tsp salt
1/8 tsp ground black pepper
Watercress (optional)

Directions
1. Preheat Broiler.
Cut each chicken breast in half lengthwise, then cut each half into 6 chunks.
Set them aside.
In a medium saucepan, melt butter over moderate heat.
Add garlic and saute for 15 seconds.
Remove the saucepan from heat.

2. Add paprika, tarragon, salt, and pepper to the garlic butter.
Add the chicken and stir until it is coated with the garlic mixture.

3. Arrange chicken in a single layer on the rack over a broiler pan.
Broil the pieces 4 inches fromthe heat until the chicken is lightly browned, about 4 minutes.
Turn the pieces over and continue broiling until tender, about 1 minute.

4. Mound the chicken pieces on a serving platter
and surround them with watercress sprigs, if desired.
