6 chicken legs (you can use any part but legs are moister and more flavorful)
12 ounces of mushrooms
1 pound of hot sausage
2 large green peppers
1 red pepper
1 large red onion
2 large cans of peeled tomatoes
red pepper or cayenne pepper
ground garlic
olive oil
pour oil in the bottom of a dutch oven and heat it
drop the chicken in to fry once cooked thru take out and set aside
put the sausage in the pan and brown take out and set aside
in the oil and fluid in the bottom of the pot put in the peppers, diced or sliced small,
the onion sliced thin
the garlic and peppers
when the vegetables begin to sweat then add the tomatoes
while the mix is simmering take the meat off the chickn and add it to the mix
take the cooled sausage and slice it and add that to the mix
you can also add steak and/or shrimp to the mix
cook it until everything is limp and tender
this goes well over spagetti squash, green beans or just by itself like a rich soup
