4 oz cream cheese, room temperature
2 eggs, separated
3 teaspoon-equivalent of sugar substitute (kind that can be cooked)splenda
Preheat oven to 350 degrees. Cream the cheese with egg yolks until smooth. Add sugar substitute. Separately, beat egg
whites until stiff but not dry. Fold cheese mixture into stiff whites (be careful not to break down egg whites). Grease cookie
sheet with butter. Drop mixture by teaspoonfuls onto cookie sheet and bake in 350 degree oven for 10 minutes.
Yield: 18 cookies
